Check out my chewy oatmeal raisin cookie recipe below which calls for no eggs, but don’t worry, you won’t miss the eggs in these.  They are perfectly chewy and moist and taste delicious.  These are great egg-less cookie, whether or not you have food allergies.

Chewy Oatmeal Raisin Cookies {no eggs}
A delicious chewy cookie - you won't miss the eggs!

Ingredients
  1. 1 cup Butter
  2. 3/4 cup Brown Sugar
  3. 1/3 cup Granulated Sugar
  4. 1 tsp Vanilla Extract
  5. 1 1/2 cups Flour
  6. 1/2 tsp Salt
  7. 1 tsp Baking Soda
  8. 1/4 cup boiling Water
  9. 2 cups Quick Oats
  10. 1 cup Raisins
Instructions
  1. Preheat oven at 350 degrees
  2. Beat Butter, Sugar and Vanilla until light and fluffy.
  3. Add flour and Salt. Mix well.
  4. Dissolve Baking Soda in boiling Water & add to mixture.
  5. Stir in Rolled Oats & Raisins
  6. Drop spoonful onto greased or parchment lined cookie sheet.
  7. Bake for 10-12 minutes.
