Thin Mints® Milkshake – (Vegan, Dairy Free, Egg Free, Nut Free, Soy Free)

Did you know it is still Girl Scouts® cookie season?!  I always get excited around this time of the year because my favorite cookie, Thin Mints®, are available for purchase.  I am a chocolate and mint lover and these cookies have a delicious chocolaty coating and they are Vegan too!  

Recently I was craving both these cookies and ice cream and I decided to whip up my own allergy-friendly milkshake to handle both the cravings and it was so so good!

I don’t know what it is about this time of the year that I crave mint-anything. It must be because of St. Patrick’s Day and then knowing these cookies are being sold I just want mint-everything.

I made the milkshake vegan by using coconut milk and coconut ice cream.  I used the Trader Joe’s coconut chocolate ice cream (it is so good… and their strawberry is awesome too,) but any chocolate ice cream would work for this.  Top with your go-to whipped topping and some crushed cookies and you have a delicious treat.

Did you know that Girl Scout councils contract with one of two licensed bakers for their cookies, ABC Bakers and Little Brownie Bakers.  Their recipes and ingredients may differ slightly so it’s always recommended to contact your local Girl Scout council to find out which baker they partner with. Of the top 8 allergens Thin Mints contain wheat and soy.  They are vegan (no eggs or dairy,) and if you are like me I can’t believe that they do not contain any dairy!

Ingredients
  1. 1 1/2 cup coconut milk (unsweetened or unsweetened vanilla)
  2. 4 bananas (frozen)
  3. 1 cup coconut milk chocolate ice cream
  4. 1/2 tsp peppermint extract
  5. 6 Thin Mint cookies, crushed
  6. optional - addition cookies and (vegan - coconut / regular) whipped cream for topping
Instructions
  1. Place all ingredients into a mixer and blend until desired thickness.
  2. Serve topped with your choice of whipped cream and crushed cookies!
