Halloween is almost here! By now I am hoping that you have heard of Teal Pumpkin Project™ which is about placing teal pumpkins on your doorstep on Halloween to let others know that you have non-food treats available for trick-or-treaters.

While the teal pumpkins are about non-food treats I thought it would be fun to make something a little ‘festive’ for the season ~ which is where this fun teal pumpkin jack-o’-lantern cake comes in. It is dairy, egg, nut, and soy free and is made using the Wacky Cake recipe (more on that below.)
Making this cake requires this fun pan from Wilton, which I picked up at Joann Fabrics & Crafts, but Amazon also carries it. You can also make this cake without the fancy pan, it will just take some cutting away of a round cake. If you are going to make it without a pan I would recommend using triangle cookie cutters for the eyes and nose and carefully using a knife for the smile.
The wacky cake recipe is really easy to make and tastes delicious! We use it in many of our cakes.
Have you ever heard of Wacky Cake? These cakes were created during the Great Depression, when eggs, milk and butter were very hard to come by. They are also known as Depression Cakes, and in the food allergy world a lot of parents make them due to egg / dairy allergies. We have been using this recipe for about 3 years and it is really hard to mess up.
To make it teal I just colored the icing and on top I added some blue and green sanding sugar. I didn’t have teal sanding sugars in the house (I’m sure someone makes them,) but the combo of the two look great!
My daughter was so excited about this cake. She even asked if we could put it outside on Halloween with the other teal pumpkins!

Check out the simple recipe below! You’ll be surprised at how simple this cake is and how tasty it is!
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. white vinegar
- 2 tsp. pure vanilla extract
- 5 Tbsp. vegetable oil
- 1 cup water
- Preheat 350 degrees F.
- Place the dry ingredients into a bowl.
- Make 3 small holes in the mixture.
- Pour the vanilla in one hole, the vinegar in another and vegetable oil in another.
- Pour water over the top and mix.
- Pour into a lightly greased pan.
- Bake for 30 to 35 minutes.
- Use a 8x8" pan if you don't have a jack-o'-lantern pan.
- Add 3 tbsp. cocoa (unsweetened) to make this cake chocolate!
- Top with your favorite icing!
