Oatmeal Chocolate Chip Cookie Pie {Allergy-Friendly} | Happy Pi(e) Day!

It’s been a while… but I have an excuse, I do, I do.  If you’ve been following me you’ll know that my family recently moved cross country from PA to CA (!) just a couple of weeks ago and I’m still getting things in order.  We had an interesting time driving cross-country over 9 days and while we made both some good and not so good memories it was a great experience that I hope to share with you all soon.   

While I have some things “in the works,”  I’ve missed my blog so much, and engaging with my wonderful readers especially.  I was excited to jump onto this fun contest / fundraiser for Pi Day as my first post back from my break.  

This delicious recipe is egg, soy, and nut free.  My daughter recently outgrew her dairy allergy but these can easily be made dairy-free with a dairy-free butter like Earth Balance and Enjoy Life chocolate chips.  (The Trader Joe’s chocolate chips have a “may contain” label for milk on them so beware if you/your family has a dairy allergy.)  

Here are the ingredients we used for our Chocolate Chip Oatmeal Pie:

I think my daughter was just as excited for this pie as I was.  It was our first time baking in {or new/temp home} in CA and while I had to make 3 trips to Whole Foods to pick-up items – I can never find that darn list – it was well worth it.  

I probably took way too many photos of her helping and I won’t bore you with with a slideshow, but I just love this one.  Adding in the chocolate chips is always her favorite part – I think because she loves to eat them straight out of the bag!  And since everything we make in our house is safe for her I never have to worry if she sneaks some – gosh, they were some of my best memories as a child!  I hope she enjoys the time we spend together cooking and baking as much as I do!

And without further adieu… I present my own tasty version of an Oatmeal Chocolate Chip Cookie Pie with no eggs, nuts or soy, and, remember it can easily be made dairy-free as well.  Happy Pi(e) Day Everyone!

Oatmeal Chocolate Chip Pie {Allergy-Friendly}
Serves 8
A delicious pie that is egg, nut, and soy-free. Can easily be made dairy-free too. Perfect for kids and adults alike. Tastes great warmed and topped with your favorite {dairy-free} ice cream!

Ingredients
  1. ½ cup butter, softened
  2. ½ cup white sugar
  3. ½ cup coconut sugar (or brown sugar)
  4. 1 ripe banana (mashed) (equates to ~ 1/4 cup)
  5. 1 tsp vanilla extract
  6. 1 cup all-purpose flour
  7. ½ tsp baking soda
  8. ¼ tsp baking powder
  9. ¼ tsp salt
  10. 1 cup old-fashioned oats
  11. 1 cup chocolate chips
Instructions
  1. Preheat oven to 350°F.
  2. In a large bowl, cream butter and sugars together. Add in banana and vanilla extract. Beat well.
  3. In a small mixing bowl, mix flour, baking soda, baking powder and salt.
  4. Add flour mixture into wet mixture. Stir until combined.
  5. Finally, add in the oats and chocolate chips and stir until combined.
  6. Spoon batter into an ungreased pie pan.
  7. Bake for 18-20 minutes or until top/edges are lightly browned.
  8. Allow the pie to cool for a couple minutes before slicing.
  9. Cut into slices & enjoy!
Notes
  1. Don't forget to top with you favorite {dairy-free} vanilla ice cream too!

    I’ve never been interested in oatmeal but I still try it once in a while for my health’s sake. I’ll be trying this out soon. Thanks for sharing.
