Nature Nate’s Honey – Review, Giveaway & Recipe for Honey Lemon Blueberry Loaf

I recently attending the Winter Fancy Food Show and was connected with so many amazing brands and companies.  Some of the brands and products were ones we use in our home, like Nature Nate’s, while others were new discoveries to me and my family. Today I can’t wait to share with you a bit more about Nature Nate’s honey and a recipe for a delicious Honey Lemon Blueberry Loaf.  PLUS, you’ll have a chance to win a lot of Nature’s Nate Honey too!  This includes a 12 oz. Nature Nate’s Raw & Unfiltered Honey is Made by American Bees and comes straight from the hive – just as nature intended. It has not been cooked, and the pollens have not been filtered out. Each batch is tested for a high pollen count and a clean read of corn syrup adulteration, pesticides, herbicides, and antibiotics before going into your bottle.  This honey is delicious!  (And remember, don’t feed honey to children one year or younger.)

Nature Nate’s partners with beekeepers to get honey straight from the hive, and they test each batch to ensure it’s of quality.  The partners are commercial beekeepers that transport their hives all over the country depending on the season.  They follow the “honey flow” – when major nectar sources are in bloom and the weather is favorable for bees to fly and collect the nectar.  There is a really great infographic on the Nature Nate’s site about how they handle their honey.

My husband was thrilled when I brought home these small individual honey packets, I didn’t even know that they existed!   These convenient packets are perfect for everyone on the go. When I spoke with companies and people at the show recently I let them in on a little secret (well it’s not really a secret,) of mine, in that I’m a beekeeper as well!  I truly absolutely love bees and before having my daughter I was actively involved in the beekeeping community and helping to spread awareness of the importance of bees to our food supply, as well as encouraging others to get involved in beekeeping.  I am really enjoying the surge of backyard and urban beekeeping, it’s a great hobby and helping all of us!

This honey lemon blueberry loaf is really tasty and free of refined sugar ~ with the Nature Nate’s honey acting as the sweetener. 


This loaf is easy-to-make and is free of dairy, eggs, and nuts, and would be great for breakfast, as a snack, or dessert!

Honey Lemon Blueberry Loaf

Ingredients
  1. 2 cups whole wheat flour
  2. 1 tsp baking powder
  3. 1/2 tsp baking soda
  4. 1/4 tsp salt
  5. 2 tbsp lemon zest (about 1 large lemon)
  6. 1 tbsp coconut oil (melted)
  7. 2 tsp vanilla extract
  8. 1/2 cup applesauce
  9. 1/2 cup honey
  10. 1/2 cup plain (dairy-free / dairy) yogurt
  11. 1/4 cup lemon juice (about 1 large lemon)
  12. 1/4 cup (dairy-free / dairy) milk
  13. 1 1/4 cup fresh blueberries
Instructions
  1. Recipe will make two small loaves (8" x 3.75" x 2.5" loaf pans) - see below note if using a larger loaf pan to make one loaf.
  2. Preheat oven to 350 degrees F.
  3. Lightly grease loaf pans with cooking spray.
  4. Wash and ry blueberries and set aside.
  5. Combine dry ingredients and lemon zest in a medium bowl. Set aside.
  6. Combine wet ingredients in a large bowl.
  7. Mix dry ingredients into large bowl with wet ingredients.
  8. Fold in blueberries.
  9. Pour batter into two lightly greased loaf pans (dividing batter evenly among pans.)
  10. Bake for 34-38 minutes, until toothpick comes out clean.
  11. Cool on wire rack.
  12. Can be served warm or cold, and best with honey drizzled on top!
Notes
  1. Add 4-5 minutes onto the cooking time (total 38-42 minutes,) if making into one loaf (9 x 5" pan.)
