Kids in the Kitchen – Blueberry Pancakes {Allergy-Friendly} & Learning to Count!

My daughter and I love making pancakes and I have them in our breakfast rotation about very 3 or 4 days.  I try to switch them up with our favorites being honey-apple, blueberry, and (our new favorite) double chocolate chip!  When we were growing up pancakes were my favorite too, my Mom has a knack for making them super fluffy and super tasty.

Since my daughter has an egg allergy I’ve used and adjusted a bunch of different recipes to find the best tasting one for us.

This week I decided to try another new blueberry pancake recipe and had my little helper in the kitchen with me for Kids in the Kitchen.  She loves to help and mix {and often taste} the ingredients!

Since we just outgrew our milk allergy I used regular cows milk in this one, but you could make using coconut milk if you have a dairy-allergy.  I also eliminated the cinnamon and added 50 blueberries into the batter. 

Adding the blueberries allowed me to add further counting into our project this week.  I washed the blueberries, placed them on her tray, and asked her to count with me as we put them into the batter.  She loves to “try” to count, but honestly cannot get passed 2 or 3, but we are working on that!  


She also loves to help stir the batter and {again} try to eat some too (I’m still working on that part!)

It is so much fun being in the kitchen with her, making memories, watching her take things in and wanting to help!


And here is the final result!  They were tasty and definitely a recipe we’ll be adding into our pancake rotation!
