I’ve got another delicious recipe for you this week featuring the new Enjoy Life baking mixes!  Last week I shared an easy way to make some delicious Strawberry Shortcake Pancakes and earlier this week I shared Blackberry Coconut Muffins and Brownies a la Mode.  Gosh, I’m getting hungry just thinking about them!

So many tasty treats that won’t have you feeling sad about food allergies or like you are missing out.  Today I have a recipe for a delicious gluten-free apple crisp using the new All-Purpose Flour Mix from Enjoy Life Foods.

Here’s another look at the new Enjoy Life baking mix line-up – All-Purpose Flour Mix, Brownie Mix, Muffin Mix, Pancake and Waffle Mix, and a Pizza Crust Mix. These are all “top eight” free (including gluten-free) and also include probiotics and plant-based protein.

Friends of ours gave us a huge bag of Gravenstein apples recently and it was the first time I had heard of this variety.  They have a little more of a tart flavor and are picked in July and August.

Even though it was summer and I usually don’t bake with apples this time of the year I had just received our new Enjoy Life baking mixes so I decided to whip up a batch of apple crisp!

My daughter loves to help in the kitchen and after I cut up the apples, tossed in some lemon juice and a little sugar I had her put them into our baking dish.

I basically made up this recipe on the fly and now will be my go-to apple crisp recipe.  I wanted to assure it was low in sugar so I added in some local honey for added sweetness and it tasted amazing.

The new Enjoy Life Foods baking flour ingredients are: Flour Blend (Millet, White Rice, Teff, Buckwheat), Rice Starch, Tapioca Starch, Brown Rice Protein, Sprouted Brown Rice Protein, Probiotic (Bacillus coagulans GBI-30 6086).  It can be used has a 1-1 ratio in your favorite recipes calling for non-gluten flour.

Although I usually reserve apple crisp for the fall this was a perfect summer nights dessert too.  You couldn’t tell it was gluten free, so full of flavor, sweetness, and crunch!

We warmed and topped with our favorite safe ice cream, but this dish would taste great without the ice cream too… but doesn’t everything taste better with ice cream on top!?

Hope you enjoy this recipe and if you want to order the new Enjoy Life Foods flour you can do so online and make sure you tell your local grocer that you’d like them to carry it in their stores too.

Let me know if you give this recipe a try!  I’m crossing my fingers my friend has some more apples for us this month too!
