Easy Peach Crisp – Dairy, Egg, Nut, Gluten Free

I love summer for so many reasons, with one of the top being all the delicious and sweet produce that is available in abundance, including peaches like these we found at our local farmer’s market recently.

My daughter and I love going to the farmer’s market on a weekly basis and she gets just as excited as I do about the fresh fruits and veggies.  We usually pick up what’s in season and she loves to aid in picking out the produce with me. 

Recently we came home with over 12 pounds (!) of peaches.  They were just so tasty and I had a hard time telling her to stop picking them out, she was just enjoying herself so much.

While we love our produce ‘as is’ meaning just cut and eaten straight, we also love using it to make various meals, sides, and desserts.  With such a large amount of peaches I decided I would cut and freeze some of them for future use and also make a couple desserts with them, including this easy peach crisp.

I typically make apple crisp in the Fall, but haven’t made a peach crisp before and it was a nice change and a great way to enjoy some of the fresh, sweet peaches that we purchased from our local farmer’s market.

And I will have to admit that my daughter and I made this peach crips in the afternoon for an after dinner dessert, but it did not last until after dinner!  We had one taste and decided to eat it for our afternoon snack.

This recipe is really easy to make and is dairy, egg, nut, and gluten-free.  If you are gluten-free be sure to choose oats that are certified gluten-free.

This recipe can be easily doubled as well and would be perfect for a summertime dessert for friends and family.

Ingredients
  1. Oil / (dairy-free) butter for greasing
  2. 2 ripe peaches
  3. 1 cup oats
  4. 1 tbsp flaxseed meal
  5. 1/4 tsp ground cinnamon
  6. 2 tbsp coconut or brown sugar
  7. 2 tbsp (dairy-free) butter
Instructions
  1. Preheat oven to 350 degrees Fahrenheit
  2. Lightly grease baking dish (I used approx 9" x 4" ceramic dish)
  3. Slice peaches and layer them on the bottom of your baking dish
  4. In a medium bowl combine rest of ingredients
  5. Bake for 15-20 minutes until top gets golden brown
  6. Remove from oven and serve warm

  1. Optional: Serve with your favorite allergy-friendly ice cream on top!
